A Schooner Valentine


Good morning and a Happy Valentine’s Day to all!

Although it’s not a surprise to anyone, chocolate aboard the Mary Day is a weekly (daily, for some) treat. Mary makes the best chocolate desserts by far and we seem to never tire of them. With much research done this winter we have come up with a new recipe to add to Mary’s repertoire…. and we’re willing to give you a sneak peek, or taste, as to what you may find aboard this summer. It’s a chocolate covered brownie, filled with chocolate chips….ooo, la, la…. It is simply divine and easy to make! We’ve made it this week in honor of Valentine’s Day. We’d love to share with you, however chocolate in this house, as aboard Mary Day, doesn’t last long. Try a batch, let us know what you think and savour every bite!

Brownies fit for a King

¾ cup sugar
1/3 cup butter
2 Tablespoons water
2 cups semisweet chocolate chips (divided)
1 teaspoon vanilla
2 eggs
¾ cup flour
½ teaspoon salt
¼ teaspoon baking soda
2 Tablespoons shortening
4 chocolate bars

In a saucepan, while stirring frequently, bring sugar, butter and water to a boil. Take off the heat and stir in one cup of the chocolate chips and vanilla. The chips should melt. Let cool while you mix the dry ingredients. In a mixing bowl, stir together the flour, salt and baking soda. Beat the two eggs in the saucepan with the chocolate mixture. Then add the dry ingredients. Stir well. Add the other cup of chocolate chips. These should not melt. Mix well and pour into a greased 9 inch square baking pan. Bake at 325° for approx. 25-30 minutes. As the brownies are cooling, in a double boiler pan, melt the four chocolate bars and shortening. Spread this over the cooled brownies. Option: try topping the melted chocolate with chopped nuts or crushed pepperment candies! Enjoy!

Thanks for the recipe. I'll be trying this one soon. Most of my co-workers are die-hard chocoholics.

On board the Mary Day, not only are we treated to Mary's dessert, we get a chocolate bar on our bunks, along with other goodies. It's like staying at a luxury hotel that moves. :)

The recipe sounds great and I plan on baking it tonight for Sarah. One question, just how large are the 4 chocolate bars that get melted with the shortening? Do I use milk chocolate, dark, semi-sweet, baker's ???

I think I'll make a simple chocolate ganache for the topping. You can't really go wrong with some good chocolate and cream.

OK Ed, to answer your question... 4 regular 1.55 oz milk chocolate bars... like the ones made in Hershey, PA, not that we are advocating any particular brand. Now you could use dark chocolate... that is my personal favorite. Jen and the kids prefer milk chocolate. Jen says don't over engineer this recipe. Just put the chocolate right to it until it can't take anymore.

Michelle, don't tell too many people how good it is. We are running out of room for the 2012 season already. If people find out how good the food is we'll have a stampede on our hands. But it is more like flying first class than some might think. I have been told the ratio of passengers to heads is the same on the schooner as first class on most planes. Ain't that something!

And yes Dan... happy valentines day to one and all. Some of you might know that Jen was collecting heart shaped rocks last summer at each beach she would stroll. All of them had to fit in the palm of her hand and they are all now glued to the edge of her bunk rail aboard the schooner. So for those who might feel a little pessimistic about the Hallmark quality of this holiday Jen has found a way to celebrate the heart all year long as only nature can create and polish something so enduring.

I love the idea of celebrating the heart all year long. Why wait for Valentine's day? Why not show our love all the time?

Ok, Barry, I'll try not to rapsodize too much about the cooking, but it's very hard not to go on and on about the fabulous experience aboard the Mary Day. It's not just the food, it's the laughter, the camaraderie, the breath-taking beauty of Maine. It's feeling all snug and happy in your bunk, and rising to another fantastic day, it's the lobster bake, and the last dinner, the music and the songs, the giggles and the jokes. And it's knowing that you will be joining your friends again the following year. Sailing on the Mary Day is highly addictive. That is why you are running out of room. You have too many "repeat offenders" LOL

I made the brownies for Sarah as part of her Valentine's Day present. I must admit however, that I chose to make a bittersweet chocolate ganache for the topping. It went over great. The best brownies I've ever had which is too bad because I really don't need to be eating brownies.

My heart is heavy with sadness as I write this particular blog. Since the beginning of August our dear friend and cook for the last 12 years, Mary Barney, had been struggling with cancer. I have intentionally respected Mary’s privacy and I apologize to you for not sharing any news about Mary’s health sooner. On Monday afternoon Mary passed away very peacefully at home, surrounded by friends and “family”. Her departure was as graceful as the rest of her life. Fall Maintenance

Good morning everyone. The sun has been kind to us these past few days and the crew has been spending much time aloft prepping and painting the mast heads and tarring the rig as part of our annual fall maintenance schedule. They were a little silly on tar fumes by the end of the day hence the rat board dance moves. Am I the only one who is reminded of Willy Wonka's little friends at the sight of the crew in their tyvek suits? Schoona-loompas? The smell of tar, after all, is what we sailors live for. Extracted from the stumps and roots of pine trees through dry distillation pine tar will cure what ails you especially some skin conditions and any emotional maladies from being too long away from the sea. All we know for sure is that Mary Day’s rigging is kept hail and hearty by coats of tar mixed with boiled linseed oil. Notice that I specified boiled linseed oil and not raw linseed oil. Oh Captain, Oh Captain, Please Don't Rumba!

Good morning everyone. Another 6” of snow fell this weekend and we took a few hours to enjoy the wonders of winter here in New England skiing in the woods. The full Wolf Moon on Saturday causing astronomical high tides plus a 1’ tidal surge brought by the low pressure system meant we had tides over the bulkhead in Camden. At low tide just the opposite happens and the tides dip well below normal. I was able to step to the docks from the beach and get aboard the schooner on Friday after work and all was well. I had an interesting email this morning from a wonderful gentleman looking for a vacation to replace a now defunct “windjammer” sailing experience that formerly sailed in the Caribbean. He sent us a very humorous swashbuckling note, complete with colorful pirate party images, wondering if we might be able to fill the void, complete with canons and limbo parties and would the captain be leading the rumba line?
