Greetings everyone. It's definitely feeling and looking like Christmas here. The kids are in full swing with school activities and playing elves here at home. Their stockings are hung by the fireplace and the cookies are baked. They wanted to share one of their favorites with you. So here is a "quick and easy" cookie for Santa. We promise, they are quick and easy! Enjoy and happy holidays! Festive Shortbread Logs 1 cup buter (no substitutes), softened ½ cup confectioners’ sugar 1 teaspoon vanilla extract 2 cups all-purpose flour 1 ½ cups semisweet chocolate chips (or milk choc bars) 4 teaspoons shortening ¾ cup ground walnuts In a mixing bowl, cream butter and confectioners’ sugar. Add vanilla. Gradually add flour; mix well. With lightly floured hands, shape tablespoonfuls into 2-in. logs. Place 2 in. apart on ungreased baking sheets.
